Instructions

Dice then half-onion and lightly fry in a skillet, stirring often. Season with salt.

When the onion has softened, add the beans and cook together for a couple of minutes, continuing to stir from time to time. Turn off the heat and set aside to cool.

Wash and cut the lettuce leaves into thin strips.

Spread the lettuce over a plate. Top with the warm bean and onion mixture (if it’s too hot, the lettuce will wilt), then add the blue cheese, cut into pieces, and a handful of olives.

Here’s the ideal dressing for this salad. It’s very simple to make. In a bowl, mix 1 tablespoon balsamic vinegar of Modena with a pinch of salt and 1 teaspoon honey. Mix well. When the honey has dissolved, add 3 tablespoons virgin olive oil whisk until thick. It’s that easy.
