Noodles with Asparagus and Chicken

Cook the rice noodles according the instructions on the package. They generally cook very quickly so keep an eye on them.

Lay the chicken breast on a cutting board. Cut into bite-size pieces and season with a littler salt (and pepper, if desired). Fry the chicken in a skillet with a little oil. When golden, remove and set aside.

Use the same skillet to fry the asparagus, washed and cut into pieces. Season with a little salt.

Add the chicken pieces and noodles to the skillet and stir together. Serve on plates. It couldn’t get any easier.
Tips & Tricks
It’s a good idea to use soy sauce instead of salt. It adds more flavor and keeps the ingredients moist.
You can finish by adding a handful of cashews, peanuts, sesame seeds, or chia seeds over the dish.
