Instructions

Cook the rice noodles according to the instructions on the package. They generally cook very quickly.

Dice the vegetables and tofu into small cubes.

Heat a little olive oil in a large skillet and lightly fry the onion and tofu over medium heat for 2 minutes, stirring often.

Next, add the zucchini and bell pepper. Sauté the ingredients over medium heat for 5 minutes.

When the vegetables are cooked but still firm, mix in the soy sauce. Then add the cooked noodles and mix well before serving.
