Shrimp Stir-Fried Noodles

Instructions

Fill a pan with water and bring to a boil. Add the rice noodles and cook for the time shown on the package. Drain and set aside for later.

Wash and cut the vegetables into very thin strips.

Carefully peel and clean the shrimp.

Heat some oil in a large skillet or wok. When hot, add the shrimp and vegetables (the onion, red bell pepper, green bell pepper, and mushrooms). Fry for 3–4 minutes over high heat, stirring constantly.

Add the soy sauce. Stir well to coat all the ingredients well with the sauce. Fry until the vegetables are cooked through but still firm (or longer if you prefer them tender.)

Add the noodles to the skillet or wok and mix well. Remove from the heat and serve.
Tips & Tricks
If you like spicy food, feel free to add a couple of chili peppers to the prawns and vegetables.
We use precooked shrimp.
The dish will be even tastier and more nutritious if you add some nuts and seeds, such as cashew nuts and chia seeds.
Add any vegetables you have in the fridge and need to use up. This dish is very versatile.
