Combine the egg, the butter at room temperature, oat flour, unsweetened Greek-style yogurt, milk, salt, sugar, and yeast. Blend for several minutes to a smooth, lump-free batter. Let rest a few minutes to thicken.

Melt a little butter in a small skillet and cover well. Then add a small amount of batter and tilt the skillet to spread all over the surface. If the batter turns out a little too thick for that, use a spatula to spread it out into a circle.

Cook for 1 minute on each side, or the time needed to cook through. Make as many as you can until all the batter is used up.
Tips & Tricks
You can accompany these oat pancakes with banana, blueberries, a little honey, and a pinch of ground cinnamon. You can’t go wrong.
