Pasta with Asparagus, Olives, and Pistachio Nuts

Instructions

Cook the spaghetti in a pan of boiling water for the time indicated on the package. Then drain and set aside.

Shell the pistachio nuts and coarsely crush with a hammer or a hard object.

Wash the asparagus spears in water and trim off the woody ends.

Cut the onion into strips. Heat little olive oil in a large skillet and lightly fry the onion, stirring regularly.

Heat a little olive oil in another skillet or a grill pan. When hot, add the asparagus and lightly fry for 5 minutes. Turn regularly and sprinkle with a little coarse sea salt or kosher salt as a finishing touch.

In a bowl, combine the pasta; asparagus; onion; crushed pistachio nuts; black olives, cut into slices; and cheese, cut into pieces. Stir and serve with a sauce or dressing to your liking (see the “tips and tricks” section for our recommendation).
Tips & Tricks
You can use feta cheese instead of goat’s cheese.
Why not serve your pasta with a tasty basil sauce? Combine a generous drizzle of olive oil, a few pinches of salt, and a handful of basil leaves in your blender. Pulse and pour over the pasta.
