Instructions

Add oil and chopped garlic to a pot. When it begins to brown, add the rice and stir for 1 minute and then add 2 cups of water and salt. Cook the rice and when it's ready, set aside. Chop the pineapple into cubes that are less than half an inch thick.

Finely chop the onion and bell peppers and then add them to a pan with oil. When they are a golden brown, add the chopped mushrooms. When it is all nice and fried add the chopped pineapple. Also add the 2 chopped garlic and ginger (if you like spicy food, add cayenne). Sauté everything for 5 minutes.

While everything is sautéing, and the rice is almost done cooking, prepare the sauce. For this you will need a bowl and the soy sauce, lemon, or lime juice, and the vinegar.

Add the sauce to the pan with the vegetables and cook for a few seconds before adding the rice. Mix everything over medium heat until the rice and vegetables are evenly coated with the sauce.

Tips & Tricks

Try adding cashews when you serve, it adds a nice crunch to the dish.

For presentation you can add a couple of mint and/or cilantro leaves.
