Peel and cut the potatoes into small pieces. Pour water to boil in a pot and cook the potatoes with a pinch of salt. When they are tender remove from the stove, drain, and let cool.

Peel and grate the carrot. Also wash and half the cherry tomatoes.

Place the clean spinach in a salad bowl. Add the grated carrot, the cherry tomatoes, potatoes, diced avocado, garbanzos, and shredded cheese.

You can finish by sprinkling a handful of chia seeds on top.
Tips & Tricks
Dress the salad to your liking. We mixed yogurt with a bit of mustard in a small bowl.
