Potatoes with Vegetables and Tuna

Peel the potatoes and dice them into fairly big size cubes. Put water to boil in a pot and add half a teaspoon of salt and the diced potatoes. Cook until they feel tender when pricked with a fork (if you cut them into small or medium size pieces, they won't take too long to cook). Next, drain them.

Peel the carrot and slice it along with the mushrooms. Chop the zucchini.

Add some olive oil to a pan. When the oil is hot add the sliced carrots and mushrooms and chopped zucchini. Cook over medium heat for 7-8 minutes, stirring occasionally. Add salt to the vegetables.

Add the chunks of cooked potatoes and the tomato sauce. Mix and let the flavors be absorbed. Turn down the heat to low and cook for another 10 minutes.

Grill the tuna in a smaller pan with oil and salt to your desired level of doneness.

Place the tuna into the pot with the potatoes and vegetables. You can serve immediately or if you'd prefer, let the tuna absorb the flavors from the other ingredients for a couple of minutes over low heat. After these few minutes, serve and enjoy.
