Quesadillas with Spinach and Tomato

Chop the cherry tomatoes and cook in a pan with a bit of olive oil, salt, and oregano for 5 minutes.

After this time, add the spinach and cook for several more seconds, until tender. Remove from the fire.

Cover half of each tortilla with grated cheese and divide the spinach filling between the two.

Heat up a pan (it is better if it is new and clean, so the little bits of leftover spinach filling doesn't burn) and cook the quesadillas for about 1 minute on each side. Slightly press so that the melted cheese seals the quesadilla.
Tips & Tricks
If you like spice, you can add some drops of tabasco or some chile powder when you cook the spinach and tomato.
You can change up the recipe by using other types of vegetables you have in your fridge.
