Instructions

Wash the quinoa under running water. Bring 2 cups of water to a boil in a pan. Then add the quinoa and cook until the kernels have popped open, about 20 minutes. Remove from the heat, drain, and set aside.

While the quinoa is cooking, open the lentils and rinse under running water. Set to one side because they will be used later.

Put the olive oil into a skillet and heat, then add the clove of garlic. After 1 minute, add the green bell pepper, cut into slices, and the tomato, diced as desired, to the skillet. Fry all the ingredients for 3–4 minutes, stirring often.

Then, add the ground meat and a little less than half a cup of the lentils you set aside earlier to the skillet. Stir well. Season with salt. After 3 minutes, add the tomato sauce. Stir and let cook for 3–4 minutes. The sauce will gradually reduce.

Serve the quinoa in a bowl and top with the contents of the skillet. Add the black olives and your bowl is ready to eat.
Tips & Tricks
You can add more vegetables to the bowl, such as mushrooms, red bell peppers, leek, onion... whatever you might like or have in the fridge.
