Salmon with Light Mustard Sauce

Mince the onion and lightly fry in a skillet with a little olive oil over low heat, stirring often. When colored, add the mustard and cream, and season with a pinch of salt. Continue to cook over low heat for 5–6 minutes. Remove from the heat. Transfer to a blender or food processor and blend well.

Heat a little olive oil in a skillet and cook the salmon fillets, seasoning with a pinch of salt.

Arrange the salmon on a plate and pour the mustard sauce over each salmon fillet. Finish by sprinkling a little pepper on top.
Tips & Tricks
We used Dijon mustard and it was delicious.
Any leftover sauce makes a perfect spread for sandwiches.
