Preheat the oven to 400°F.

Beat the eggs in a bowl.

Add the quartered cherry tomatoes, grated cheese, salt, and oregano. Mix well.

Divide between the muffin molds and bake for 30 minutes. Prick with a fork or knife to make sure the egg has cooked thoroughly inside before removing from the oven.
Tips & Tricks
The quantities listed make about 4 muffins.
Add some garlic powder and black pepper for more flavor.
Before baking, you can add a bit more cheese so it comes out a bit more toasted and crispy.
