Cook the rice noodles according the instructions on the package. They generally cook very quickly so keep an eye on them.

Mince the garlic.

Wash and cut the mushrooms, carrot, and onion into strips or slices.

Heat a little oil in a large skillet or wok, and fry the vegetables, stirring often. When the vegetables are cooked but still crunchy, add the shrimp and cook for 1 minute. Stir in the soy sauce, tomato sauce, and water. Then add the cooked noodles and mix well before serving. Enjoy!
Tips & Tricks
Feel free to add a tablespoon of oyster sauce to the wok when you add the soy sauce.
You can use vegetable or chicken broth instead of water. It adds a delicious flavor.
We use precooked shrimp.
