Sweet Potato, Avocado, and Black Beans Bowl

Instructions

Start by cooking the rice. To do this, put a tablespoon of olive oil into a pan and heat. Then slice up a garlic clove and add. When the garlic starts to color, add the rice. Stir for a couple of minutes. Then add the water and a teaspoon of salt. Cook over high heat for 7 minutes, then reduce and simmer for 8 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a short while, covered with a lid.

Cook the sweet potato in a pan of boiling water. Once soft, cut into slices.

Cut open the avocado, remove the pit, scoop out the flesh, and cut into dice.

Then drain the canned beans.

Put a serving of rice into a bowl. Then top with the sweet potato, the avocado, and beans.

Tips & Tricks
Here’s a perfect dressing for this bowl. Mince half a clove of garlic and combine in a bowl with a cup of yogurt, a dash of lemon juice, a pinch of salt and (if you have it and like it) a handful of minced cilantro. Mix well, season with a little pepper, and use.
Why not add diced feta cheese to the bowl for a fabulous touch. We did and it was amazing.
