Rice Bowl with Avocado and Salmon

Instructions

Add 1 tablespoon of olive oil into a pot, and when it gets hot, add 1 sliced clove of garlic. When it becomes fragrant and golden brown then add 1 cup of rice. Stir it for several minutes before adding 2 cups of water and a teaspoon of salt. Cook over high heat for 7 minutes and then lower the heat to low. Cook for 8 more minutes. If in this time the rice has absorbed all of the water and is still hard, add some more water. Let it stand with the lid on.

In a pan, add some olive oil and cook the salmon with salt.

Open the avocado and remove the flesh, slicing it as you go.

In your bowl add the rice, then the sliced avocado. Add the salmon and arugula and serve with slices of lemon.
