Instructions

Remove the seeds from the dates and let them soak for a while so they become tender.

Peel the carrot and slice.

Place the almonds in a food processor and blend for several seconds.

Drain the dates and add to the processor together with the sliced carrots. Blend again for 10 seconds on medium velocity.

Turn on the oven to 375°F.

Place a sheet of parchment paper on the baking sheet and make 9 balls from the cookie dough. They should be thin and round. Bake for 11 minutes, keeping an eye on them so they don't burn.

Move to a rack to cool and save in an airtight container.
