Instructions

Rinse the quinoa under water. Pour 1 1/2 cups of water into a pot. Once it begins to boil add the quinoa with a pinch of salt and cook for approximately 20 minutes or until the seeds open. Remove, drain, and set aside.

Prepare the vegetables. Finely chop the garlic. Dice the eggplant into small dice and slice or finely dice the red bell pepper and onion.

Drain the tofu and place on a cutting board. Dice into small cubes.

Drizzle some olive oil in a pan and once it's hot add all of the vegetables you have just cut. Sauté on medium heat for several minutes.

After this time add the tofu you had set aside and add some salt and cook for about 3-4 minutes.
