Instructions

Peel the sweet potato and cut into medium size dice. If your sweet potato is small, then you can use a whole one. But if it's large then using half will be sufficient.

Place the turkey on a cutting board and add some salt and pepper on top. Place the turkey in an oven safe bowl or dish with the sweet potato dices. Sprinkle the turkey and the sweet potato with a good amount of olive oil and add the halved garlic cloves. Place in the oven and cook for approximately 30-40 minutes (the time will depend on each oven).

Wash the kale and use a knife to cut the leaves and the stems.

Chop a clove of garlic and fry in a large pan. When the garlic is golden brown add the kale and some salt. Sauté for 4-5 minutes and then remove from the heat.

Place a piece of turkey on each plate, followed by the kale and sweet potato.
