Turkey Sauté with Nuts and Zucchini

Instructions

Wash the zucchini and finely slice it using a mandoline. If you don't have a mandoline, it's okay, you can cut the zucchini into cubes, long slices, etc. Also dice the turkey breast.

Add some olive oil to a large pan and lightly fry the finely chopped garlic.

After a minute of cooking the garlic add the diced turkey breast to the pan with a pinch of salt. Sauté over medium heat for 3-4 minutes.

Add the slices of zucchini and sauté over medium heat for 3-4 minutes. You can add a little more salt if you think it necessary.

Add a handful of peeled pistachios and cashews and continue to sauté everything for several more minutes. When the zucchini is about done, turn off the heat. Serve the contents of the pan onto a plate and finish by sprinkling the goat cheese on top.
Tips & Tricks
You can also add chia seeds to the sauté.
You can substitute the nuts we have suggested for your favorite ones.|You can omit the salt in the recipe and use soy sauce instead.
