Instructions

Rehydrate the TVP. To do this, soak in a bowl of water for at least 20 minutes, then drain.

Heat a little olive oil in a large skillet. Then lightly fry the onion, minced, and the bell peppers, cut into strips, over medium heat for 6–8 minutes, stirring often.

Add the TVP to the skillet, raise the heat a little, and continue to cook for 5 more minutes.

Add the tomato sauce (preferably homemade) to the skillet, stir in, and cook for 5 more minutes.

Heat the tortillas in the microwave or in a skillet and fill with the contents of the skillet.

You can finish by adding a handful of cheese to the filling, rolling up the tortillas, and putting them into the hot skillet for a few seconds to melt the cheese.You can add more vegetables, and this is a way to use the ones that are on the verge of spoiling. Nooddle doesn’t believe in waste.
