Cut the bell peppers and onion into strips and lightly fry with the spinach in a skillet with olive oil. Season with salt.

Meanwhile, prepare the lentil hummus. Put the drained and rinsed lentils into a bowl or plate and mash with a fork. Combine with the tahini and cumin and mix thoroughly. Feel free to heat the hummus in a pan or in the microwave.

In a hot skillet, warm the tortillas for one minute on each side.

Spread lentil hummus over each tortilla, top with fried peppers and fresh spinach leaves, and close the tortilla. Now they're ready to enjoy!

You can use any vegetables that you have at home for the filling.
You can serve the lentil hummus as a dip accompanied with carrot sticks or crackers; just remember to make double the amount.
