Preheat the oven to 350°

Grate the zucchini and peeled carrot. Mix both ingredients and place in a colander. Press to extract all the water possible, since they both hold a lot of water.

Beat the eggs in a bowl. Add the drained vegetables to the beaten eggs and mix well. Add a bit of salt and mix again.

Spread a piece of parchment paper on a baking sheet. Place the egg mixture on the parchment paper and try to form a thin-medium rectangle. Place in the oven and bake for 15 minutes.

After this time, remove from the oven. Place the turkey slices on top of the baked egg. Add the goat cheese on top and place back in the oven. Bake for 7 minutes at the same temperature.

After the indicated time, remove from the oven. Let it cool down for several minutes before carefully rolling the egg. Use the parchment paper to help roll, carefully removing the paper as you roll.
