Wash and grate the zucchini. If you have time, drain the zucchini in a strainer for 15 minutes, pressing firmly with a fork from time to time to squeeze out as much water as possible. It doesn’t matter if you don’t have time. Just put the zucchini in a strainer and press down hard with a fork just once and the water will gradually come out.

Wash and slice a tomato into rounds. Set aside for later. Wash the basil leaves.

Mix the zucchini with the egg, flour, 1/2 cup mozzarella cheese, a pinch of yeast, and the salt in a bowl. This mixture is going to be your pizza dough.

Sprinkle a little flour on a baking sheet and use a rolling pin to roll out the pizza dough.

Top the pizza with several tomato slices and the rest of the cheese and bake in the oven at 400ºF for 20 minutes.

When it comes out of the oven, arrange a handful of basil leaves on top and your zucchini pizza is ready.
Tips & Tricks
Sprinkle with a little oregano and pepper to give extra flavor to your pizza.
