Start by preparing the rice. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to color, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Slice the bell peppers and onion into strips.

In a large pan add 2-3 tablespoons of olive oil. When it is hot, add the sliced bell peppers and onion and cook less than 10 minutes over medium heat. During this time, they will become tender.

Wash and drain the garbanzos, then add them to the pan. Fry the garbanzos together with the bell peppers and onion for a couple of minutes. Add a pinch of black pepper, and add the tomato sauce.

Stir the ingredients, add 1/2 cup water, and cook for 10 minutes. Little by little the liquid will be absorbed.

Begin to plate the dish. For this, place several spoonfuls of rice and then the bell peppers, garbanzos, and onion.
Tips & Tricks
If you would like to make this bowl healthier you can add a fried, hard boiled or poached egg (the egg can be cooked any way you like really).
If you only have one color of the bell peppers, it's okay! The ideas is to have around 1 cup.
