Instructions

Fill a pan with water and bring to a boil. Cut the broccoli into small florets and add to the boiling water together with a little salt. After 4–5 minutes, use a spoon or skimmer to remove the broccoli. Cook the noodles in the same water for the time indicated on the package.

Peel the shrimp, making sure to remove any traces of shell. You can leave the fins on or remove them as desired.

Put the shrimp into a bowl and add the soy sauce. Marinate for 10 minutes.

Put the flour, beaten egg, and breadcrumbs into 3 separate bowls. Then dredge each shrimp in flour, dip in the egg, and cover with breadcrumbs.

Heat oil in a skillet and fry the shrimp one at a time. Drain off any excess oil on paper towels.

Arrange noodles, broccoli, and shrimp in each bowl. You can drizzle a little soy sauce over the top.

Tips & Tricks

For this recipe we used panko breadcrumbs for the shrimp. They have a coarser texture and become very crunchy when fried. You can find them in most supermarkets.

We used flat rice noodles.

You can marinate the jumbo prawns in teriyaki sauce instead of soy sauce.
