Instructions

Preheat the oven to 400ºF.

Mix the flour and yeast in a bowl and set aside.

Beat the eggs and sugar in another bowl until the sugar dissolves.

Add the mascarpone cheese, vanilla, coconut, and beat again until you have a creamy texture.

Add the liquid mixture to the dry mixture and continue to mix.

Grease an oven-safe mold and pour the mixture into it. Bake for approximately 30 minutes, or until a toothpick or knife come out clean when you prick the center.

Remove from the oven and place on a cooling rack to cool. Enjoy!

Tips & Tricks

This sponge cake is amazing, but if you would like, try adding a delicious topping. We'll tell you how. Add a bit less than 1/2 cup of mascarpone cheese to a bowl followed by 1/4 cup yogurt, a tablespoon of sugar, tablespoon lime zest, and juice from 1/2 lime. Mix this mixture in a blender and then spread the cream on top.
