Couscous with Chickpeas and Mushrooms

Combine 1 cup water with a little salt in a pan and place over the heat. When the water comes to a boil, add the cup of couscous and turn off the heat. Let stand until the couscous absorbs the liquid.
Mince the onion and wash and cut up the mushrooms.
Heat a little olive oil in a skillet. Add the onion and mushrooms and lightly fry over medium heat, stirring regularly, for 6–7 minutes or until the ingredients have softened.
Add the chickpeas and stir together with the vegetables for a few more minutes. Season with a small sprinkling of salt.
Finish by mixing in the couscous with the rest of the ingredients over the heat for about a minute. Now it’s ready to enjoy.
