Creamy Carrot Soup with Coconut Milk and Ginger

Peel the carrots and cut into relatively thin slices. Also mince the onion and garlic.

Heat the olive oil into a pan. Add the minced onion and garlic and lightly fry for a couple of minutes over medium heat, stirring regularly and taking care not to burn them.

Add the sliced carrot to the pan and continue to fry for 5 more minutes.

Add the water to the pan, reduce the heat to low, and simmer for 6–7 minutes.

Next, add the coconut milk, salt, and ginger. Cook for 8–9 minutes over low heat.

Transfer the contents of the pan to a blender or food processor and blend until smooth. Now it’s ready to serve. Enjoy!

This soup will be even more delicious if you use chicken broth instead of water.
