Instructions

Cut the chicken breast into medium pieces and season with a little salt.

In a bowl, beat the eggs with a pinch of salt.

Put the dried breadcrumbs (see “Tips and Tricks) and sesame seeds on a plate and mix.

Dip each piece of chicken in the beaten egg and then dredge in the mixture of breadcrumbs and sesame seeds.

Arrange each piece of crumbed chicken on a baking sheet lined with parchment paper. Drizzle each piece with a a little olive oil and bake in the oven at 360ºF for 15 minutes.

Tips & Tricks

We use coarse dried breadcrumbs in this recipe. If you like to make your own breadcrumbs, when grinding the bread in a food processor, don’t use the highest setting because the crumbs will be turn out small. Use the lowest setting for larger crumbs. You can also buy coarse panko breadcrumbs at the supermarket.

You can accompany the chicken with a simple salad of avocado, baby spinach, feta cheese, and lime.
