Instructions

Wash and dice the red onion. Add the onion to a bowl and add some cold water and let it stand for 10 minutes to remove the spiciness and bitterness.

Meanwhile, wash the tomatoes and remove the top part. Remove the pulp with a spoon or knife and place the tomatoes upside down on a plate so they finish draining.

Remove the liquid from the tomato pulp and chop into pieces. Place the chopped pulp in a deep bowl.

Chop the green bell pepper and cucumber into small cubes. Slice the black olives. Add these vegetables to the bowl with the tomato pulp.

Prepare the sauce for the filling. Mix the greek yogurt, olive oil, oregano, bell pepper, garlic powder, lemon juice, cilantro, and salt to a bowl. Mix well.

Add the sauce to the chopped vegetables and stir together with a spoon.

Fill each well drained tomato and sprinkle some oregano on top to decorate along with some sliced black olives.
