Begin by mixing the mustard and honey together in a small dish.

Next, baste the chicken with the honey mustard sauce and saute in a nonstick skillet over medium heat. Cook the chicken on both sides for approximately 7 minutes on each side or until the internal temperature reads 160 degrees.

Next, cut the cabbage, carrots, and basil into small thin strips and set them aside.

When the chicken finishes cooking, assemble the sandwiches. Divide the mayonnaise between the bread halves, place approximately 4 ounces of chicken on each bread, then layer it with the cheese, cabbage, and carrot mixture, and top with the basil.
