“Kale is rich in calcium and minerals and is great to cook with. Sometimes using kale in salads can get boring, so try it with lentils, vegetables and a bit of rice. You'll fall in love with this dish with just one bite.”

Instructions

1
Start by preparing the rice. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to color, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.
2
Wash and cut the kale into smaller pieces (bite size).
3
Chop half an onion and lightly fry over medium heat in a large pan. When the onion is clear, add the kale and cook for 3 minutes over medium heat.
4
Wash the lentils, then add them into the pan. Cook for several minutes before adding the crushed tomatoes and salt. Cook over medium heat for 3-4 minutes.
5
Serve the contents from the pan onto your plate along with some rice.

If you like cumin, don't hesitate to add 1/2 teaspoon when cooking the lentils. Add the cumin when you add the salt to the ingredients. The cumin gives the dish an extra bit of flavor.
