Pear and Walnut Galette

Instructions

Let's prepare the filling. Mix the goat cheese, honey, brown sugar, and walnuts in a bowl using a fork. Set aside.

Preheat the oven to 445°F.

Thinly slice the pears. Set aside.

Place the parchment paper on top of a baking sheet, remove the dough from the fridge and spread it out on the paper. Form a circle about 12 inches in diameter.

Sprinkle the honey goat cheese mixture on top leaving about 2 fingers worth of distance between the filling and the edge of the dough. Add the pear slices on top.

Close the edges of the galette, folding the edge onto the filling so that the galette doesn't come undone and bakes well.

Crack an egg in a bowl and mix it. Brush the egg wash on the edges of the galette and sprinkle some sugar on top.

Put the sheet into the oven and bake for about 25 minutes. Serve the galette hot or cold.
Tips & Tricks
To make the dough easier to manipulate you will always need to cool it for at least 30 minutes in the fridge or 15 in the freezer.
If you would like you can sprinkle some fresh rosemary when serving to give it a special touch.
If you don't like goat cheese you can substitute it for camembert, or brie.
You can also add a handful of pistachios.
You can substitute the brown sugar for coconut sugar.
