Instructions

Preheat the oven to 350ºF.

Finely chop the onion and garlic.

Drizzle some olive oil into a large pan and when it's hot add the onion and garlic you have just chopped. Fry it on medium heat, stirring occasionally, and taking care not to burn them. The onion should be tender.

Add the washed spinach to the pan and cook for 3 minutes. Add some salt. You will notice that the volume will notably reduce.

Cut the puff pastry into two. Spread the cooked spinach onto one of the puff pastry slices and then add the sliced goat cheese on top. Close the pastry with the other slice you had set aside.

Place in the oven and bake at 350ºF for about 20-25 minutes or until golden brown. Serve warm.

Tips & Tricks

In order for the puff pastry to come out golden brown you should beat an egg and use a brush to spread a bit of the beaten egg on top. Since you will have leftover egg you can save it for later and use it in another recipe.
