Spinach Pancakes Stuffed with Ham and Asparagus

Instructions

Wash the spinach and add to your food processor. Add the water and blend well.

Add the eggs, flour, and salt to the mixture and blend everything.

In a pan add some drops of oil and spread throughout the pan. Spread some of the batter you had set aside and move your pan in a circular motion to spread the batter thinly and evenly. Cook for 1-2 minutes (until bubbles form). Flip it carefully.

In another pan add some olive oil and once it's hot add the asparagus with some salt.

Fill each crepe with a slice of Serrano ham and some asparagus. Close and place each crepe back into the pan to sear both sides.
Tips & Tricks
With the indicated amount of ingredients we got 6 crepes out of the recipe.
You can add a handful of cheese into each crepe to make the crepes even juicier.
