
Tabbouleh: Cold Couscous Salad

Pantry ingredients

couscous
1 cup

cumin powder
1 tbsp

black pepper

olive oil

Instructions

Put 1 cup water and a little salt and olive oil in a pan and heat. Just before the water comes to a boil, turn off the heat and add the cup of couscous. Let stand until the couscous absorbs the liquid. Then add a little more salt and oil if necessary, and stir (do this away from the heat).

Peel and finely dice the cucumber, onion, and tomato. Combine the vegetables in a bowl.

Mince the parsley and mint. Add to the bowl, together with the olive oil and lemon juice.

Add the couscous and mix well.

Finally, season with the cumin and pepper, and add a little more salt if necessary. Enjoy!
Tips & Tricks
You can add raisins or diced apple for a hint of sweetness.
For a gluten-free version, try using quinoa or bulgur instead of couscous.
