Instructions

Wash and slice the zucchini as thinly as possible. Spread the slices over the serving dish.

Cut shavings of Parmesan and scatter over the slices.

Squeeze the lemon and mix with the oil.

Drizzle the mixture over the slices and cheese, and season with salt and pepper.

Finally, arrange a handful of arugula in the middle of the dish and it's ready to serve.
Tips & Tricks
To cut very thin slices of zucchini, you can use a mandoline slicer if you have one.
If you’re not planning to eat immediately after making it, hold off adding the dressing until the last minute.
