
Beef and Bean Enchiladas

red kidney bean
1 small jar

tomato sauce

Chop the onion and bell peppers finely and sauté in a pan with some olive oil and salt for 10 minutes or until the vegetables are tender.

Add the chopped meat and cook 2-3 more minutes until it is well cooked.

Add half of the tomato sauce and rinsed and drained beans. Also add the oregano and cook for 5 more minutes together.

Divide the filling between the tortillas and roll them up, placing them in a baking dish. Add the rest of the tomato sauce and grated cheese on top.

Bake for 20 minutes at 400°F. Remove from the oven and serve.
Tips & Tricks
For a vegan option, you can eliminate the meat and add more beans.
Add a bit of garlic powder and black pepper to the sauce to give it more flavor. And if you like spice, you can add some chili powder, or tabasco.
Try to use a tomato sauce that doesn't contain added sugars, to prevent a high sugar quantity.
You can serve with slices of avocado for a fresh touch.
