Instructions

Drain the garbanzos and rinse well under water. Drain and set aside.

Prepare the vegetables. Wash and chop the kale to medium size pieces. Wash, peel, and slice the onion to long slices. Wash the bell pepper and remove the seeds. Slice and set aside.

Heat up a pan with some olive oil. Cook the onion and bell pepper for several minutes.

Add the garbanzos and kale along with the honey, mustard, pepper, and salt. Cook the ingredients for a couple minutes until the flavors are well blended.

Add a drizzle of lemon juice to the mixture and add the ingredients to a deep plate.

Place the pan on the stove again and warm the tortillas for several seconds, flipping a couple times so they don't burn. Serve the tortillas as a side for the garbanzo sauté.

For the yogurt sauce, mix the yogurt, dash of pepper, drizzle of lemon juice, and salt in a bowl. Stir well with a spoon.

Drizzle the yogurt sauce on top of the ingredients and serve with a cilantro leaf or a nut of your choice along with the tortillas. Now it's time to enjoy your creation!
Tips & Tricks
If you don't have kale at hand you can use spinach, Swiss chard, or cabbage.
You can eat this sauté in taquitos with whole wheat tortillas.
If you would like it to be saucier you can add more yogurt sauce on top, the mixture of flavors is spectacular.
