We used unsalted, roasted peanuts in this recipe. If you bought the peanuts in the shell, start by removing the shells and peeling off the brown skins. You can also use blanched peanuts as long as they're unsalted.

Put the peeled peanuts into a blender or food processor. Add 2 tablespoons olive oil and blend until smooth and creamy. Mixing time will depend on the power of your blender or food processor. However, you should blend for at least 4 minutes.

You can store the peanut butter in a glass jar in the fridge. It will easily last a couple of weeks.

You should use unsalted, roasted peanuts for this recipe. If you buy your peanuts raw, roast them in the oven. Spread them over a baking sheet lined with parchment paper and roast for 3–4 minutes at 360°F. Keep a close eye on them to make sure they don't burn as they will no longer be usable.

There are recipes that just call for blending the peanuts without adding oil. However, we add olive oil because we love the texture and smooth consistency that the oil gives.

If you want to add a hint of sweetness to the peanut butter, drizzle a little honey over the peanuts before blending with the oil.
