TVP with Broccoli and Rice

Rehydrate the TVP. To do this, soak in a bowl of water for at least 20 minutes, Then drain.

While the TVP is hydrating, cook the rice. To do this, put a tablespoon of olive oil into a pan and heat. Then add 1 sliced garlic clove. When the garlic starts to color, add the rice. Stir for a couple of minutes. Then add the water and a teaspoon of salt. Cook over high heat for 7 minutes, then reduce and simmer for 8 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a short while, covered with a lid.

Wash and cut the broccoli into florets. Cook in boiling water for 3–4 minutes. Then drain and set aside for later.

Mince the other garlic clove and lightly fry in a large skillet with a little oil. When the garlic has colored, add the TVP to the skillet. Lightly fry over medium heat for 3–4 minutes, stirring often. Then add the broccoli and drizzle with soy sauce. Cook everything over medium heat for 3–4 minutes.

Finish by adding the rice to the skillet. Put in 6–7 tablespoons (add more or less depending on how hungry you are) and mix together with the other ingredients in the skillet. Cook together for just 1 minute to blend all the flavors well.

If you have some cooked rice in your fridge, it will take less time to make this dish.
