Instructions

Peel the carrots and slice into quite thin rounds.

Bring water to a boil in a pan, add the carrots, and cook until soft. Drain. Mash with a fork (or in the blender).

While the carrots are cooking, rinse the chickpeas under running water and drain well.

In the blender, combine the chickpeas, peeled garlic, salt, cumin, the juice from the lemon, tahini, oil, paprika, and mashed carrots. Blend, gradually adding the water until the mixture turns creamy.

Transfer the mixture in a bowl and serve with Melba toast, corn chips, or something you can spread the hummus on.

Tips & Tricks

Don't worry if you don’t have any tahini; it's simple to make at home. It couldn't be any easier. You need 2 teaspoons of sesame seeds and 4 tablespoons of water or olive oil (whichever you prefer). Wash the seeds. If the seeds are not already toasted, toast them in a skillet for 5 minutes. Once cool, combine the seeds and the liquid in a blender and blend to a paste. Now you do have tahini.
