Chicken and Broccoli Sauté with Rice

If you don't have cooked rice, start by making some. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Slice the chicken breast into slices or cubes. Pour some oil into a pan with a pinch of salt. Cook the chicken until it's golden brown. Remove from the pan and set aside.

Wash and cut the broccoli into florets, and also wash and chop the green beans and bell pepper.

Add some more oil into the pan and lightly fry the other garlic clove. When the oil has absorbed the garlic, flavor add all of the vegetables to the pan and sauté over medium heat for 7-8 minutes. Check the vegetables to see if they are still crunchy but not raw and then add the chicken and cashews. Sauté everything for several minutes.

Serve the rice on a plate and place the chicken and vegetables on top. Enjoy!
Tips & Tricks
You can add soy sauce to the recipe instead of salt.
If you would like, you can add a handful of sesame seeds to the chicken.
