Bring water to a boil in a pan. Boil the eggs , about 10 minutes. Remove from the pan, let cool, and then peel.

While the eggs are boiling, cut open the avocado, scoop out the flesh and mash with a fork. Add a little olive oil and salt and mix well.

Finally, grate the Parmesan cheese.

Put everything –– the boiled eggs, the avocado flesh, the Parmesan –– into a bowl and mix carefully.
Tips & Tricks
If you like your food spicy, you can add a little cayenne pepper to the bowl for a bit of zing.
