Peel the carrot and grate. Cut the cheese into cubes.

Place the chopped lettuce and shredded carrots into your salad bowl. Add the chicken and diced cheese on top. Add a handful of peeled pistachios and enjoy!
Tips & Tricks
We dressed this salad with oil, Modena balsamic vinegar, and salt. Easy and delicious!
If you don't have roasted chicken you can grill some chicken breast on the stove, chop it or slice it, and add to the salad.
