Jumbo Shrimp and Arugula Salad

Peel the cooked shrimp making sure to remove any traces of shell. Cut in half if they are very large.
Wash and halve the cherry tomatoes. Peel and cut the avocado into chunks.
Wash the arugula and the lamb's lettuce and put into a salad bowl.
Sprinkle on the cherry tomatoes, the avocado chunks, and the jumbo shrimp.
Season the salad with oil, lemon juice, and salt. It’s ready to serve!

You can use any variety of salad greens you want, though arugula goes really well with jumbo shrimp.
