Macaroni Pasta with Eggplant and Mozzarella

Instructions

Cook the pasta in boiling water for the time indicated in the instructions.

Wash the eggplant. Cut into small dice and finely chop the garlic.

Add some olive oil to a pan. Add the diced eggplant with a pinch of salt and let it cook for 8-10 minutes. When 4 minutes have passed, incorporate the garlic.

Now place the tomato puree, sugar, and some salt into the pan. Let it cook for 8-10 more minutes.

Lastly, add the chopped ball of mozzarella cheese and let it melt together with the pasta. Serve immediately so you can enjoy the melted cheese.
Tips & Tricks
If you don't have crushed tomatoes, you can substitute them for fresh tomatoes. Cut 2 or 3 and add them to the pan. But also, if you don't have fresh tomatoes you can use tomato sauce instead. Add 4 tablespoons to the pan.
