
Quinoa and Chicken Salad

Instructions

Rinse the quinoa under water. Put a cup and a half of water to boil. Once boiling add the quinoa, a pinch of salt, and cook for approximately 20 minutes or until the seeds open. Remove from the heat, drain, and set aside.

Cut the chicken into cubes and add a pinch of salt. Add some olive oil to a pan and cook the chicken until it browns. Let it cool.

Cut the fresh ingredients on a cutting board. Dice the tomato and onion, and chop the cilantro.

Mix the quinoa, chicken, tomato, and onion in a bowl. Add the cilantro, a drizzle of lemon juice, some salt, and oil and mix. Serve on two plates and enjoy!
Tips & Tricks
You can sauté the corn in a pan with some oil or butter for several minutes.
If your tomato is large, one will suffice but if not then you will need two tomatoes.
