Spaghetti Carbonara

Instructions

Place a pan on medium heat and add the peeled garlic and a bit of oil.

While the oil is heating up, slice the bacon.

When the garlic browns, remove and add the bacon.

Cook the spaghetti in boiling water with a teaspoon of salt for the time indicated on the package.

Meanwhile, beat the egg with the cheese, but set aside a tablespoon of cheese for decorating later.

While the bacon is cooking, add a ladleful of pasta water and mix with the egg and cheese.

Drain the spaghetti, without rinsing, and serve on a plate together with the bacon, cheese, and egg sauce.

Add the reserved cheese and a pinch of pepper and serve.
Tips & Tricks
If you're a bit reluctant of a slightly undercooked egg, you can heat up a pot and slightly cook the egg in the sauce and pasta.
The garlic is optional, it gives a light flavor to the oil and will let you know when the oil is hot.
The pasta should never wait for the sauce and shouldn't be rinsed, so it doesn't lose it is starchiness.
